Carrot and Coriander Soup
Soup is so easy to make and tastes so much nicer than the shop bought offerings. This carrot soup is easy and involves just a few ingredients. Sometimes, you don’t want the hassle of preparing lots of different ingredients to make a meal, especially when you are in a hurry or tired. So, we have made it as easy as possible to make; it only takes 30 mins from start to eat.
Oh, and don’t forget the health benefits of carrots. They are high in antioxidants and beta carotene, which is crucial for improving immunity in the body, protecting skin and eye health, and fighting the damage that can lead to cancer and heart disease. So, go carrots!
- 1 tbsp olive oil
- 1 medium onion roughly chopped
- 1 medium potato leave the skin on roughly chopped
- 500 g carrots peeled and roughly chopped
- 1 tsp ground coriander
- 1.2 litres vegetable stock
- A handful of fresh coriander
- Squeeze of lemon juice optional
Cook the onion, carrot, garlic and potato in the olive oil on a gentle heat for about 5 mins until the onion is starting to soften. Add the coriander, continue cooking for 2 mins. Add the stock, bring to the boil and then simmer for 15 mins until the vegetables are tender.
Add the fresh coriander and blitz with a stick blender or in a food processor. Add a squeeze of lemon (if using) and season to taste and stir. Serve with crusty bread. Easy!
