Black Bean and Mushroom Sweet Potato
This is one of my favourite dishes. It’s so easy to make and yet is delicious and filling. You can use sweet potatoes or baking potatoes, although to be honest, I prefer the sweetness of sweet potato. I’ll often have it for dinner when I am in a rush and don’t have much time. In addition to a baked potato, the black beans and mushrooms work well together and the caramalised spring onions add a sweetness, whilst the avocado gives the dish a clean fresh taste.
Don’t forget about the health benefits; avocado is packed with goodness and is considered a superfood. They are packed with nutrients, healthy fat, fiber and phytochemical content. Black beans help protect against inflammation, heart disease, weight gain, diabetes and cancer whilst mushrooms are an anti-inflammatory and a great source of B vitamins, trace minerals, and fiber. What’s not to like about the meal?
An easy but very healthy, tasty and filling meal.
- 4 large sweet potatoes or 4 large potatoes
- 400 g can black beans drained
- 250 g mushrooms sliced
- 8 spring onions, trimmed
- 1 tsp chilli flakes
- Pinch sea salt, about ½ tsp
- 2 tbsp parsley, finely chopped
- 20 mls oilve oil
- 2 avocados, ripe
- 2 limes, quartered
- 2 tsp tahini
- 30 mls olive oil
- 50 - 75 mls water
- Juice of a lime
- ½ garlic clove crushed
Heat the oven to Gas 5/ 190c/ 375f
Cook the potatoes in the oven for 35 – 50 mins (less time for a sweet potato) until tender.
Place the spring onions in an ovenproof dish with a drizzle of olive oil and a pinch of sea salt and cook in the oven for 30-35 mins until starting to brown and wilt.
Make the dressing by adding the ingredients together and whisk with a fork. Add enough water to make the dressing a runny consistency. Once you are happy, stop adding water.
Cook the mushroom in a pan over a low to medium heat with a little olive oil for about 10 mins until they are soft. Then add, the black beans pan and continue to cook over a medium heat for 2 mins. Try not to stir too much, otherwise the beans will break up and become mush! Add the chilli and salt and gently mix together.
Slice the avocados in half and remove the flesh from the skin and slice.
To serve, cut the potatoes in half and add the mushroom and black bean mix, the spring onions and avocado. Drizzle over the dressing and the parsley.
