Roasted chargrilled vegetable soup
Soup is wonderful if you are in a hurry as the last thing you need to get a nutritious meal is lots of cooking. Our roasted chargrilled vegetable soup is both nutritious and easy to make. Serve it with lots of crusty bread for a filling meal. We have cheated a little bit by using shop bought frozen vegetables but that’s ok. Life is too busy to worry about a few cheats here and there. If you have the time, then you can roast your own fresh vegetables and caramelise them before adding them to the stock and blitzing them. But if you want a quick meal then why not let others do the work? Roasted chargrilled vegetable soup is rustic, warming and filling. Enjoy 😉
A warming and filling, rustic vegetable soup
- 700 g frozen chargrilled vegetables 1 packet
- 250 g cherry tomatoes or any tomatoes
- 1 litre vegetable stock
- 4 tbsp dairy free creme fraiche we used Oatly
- bread to serve
Place the chargrilled vegetables and tomatoes in a baking tray and cook according to the packet instructions.
Transfer to a pan and add the stock. Blitz with a hand blender or blender until half the soup is liquidised. You want to leave lots of vegetable chunks.
Serve with a tablespoon of creme fraiche and lots of crusty bread.
